Talento Metodo Classico

Talento in a nutshell:
A national association (Italy) that is responsible for the creation and execution of various guidelines and regulations regarding the production and marketing of quality sparkling wines that are made in the traditional or classical method (methode champenoise).

More specifically:
- Officially called the "Istituto Talento Metodo Classico"
- Establishment of law no. 164/92 - Feb. 10, 1992:
Article 1:
- Talento only refers to sparkling wines that are made according to the Metodo Classico (traditional method).
Article 2:
- Grapes must come from specific D.O.s (Denominazione dOrigine)
- Grape Varietals permitted:
- Chardonnay
- Pinot Bianco
- Pinot Nero (Pinot Noir)
Article 3:
- Delimited area to include the following regions: Piedmont, Lombard, Trentino, Alto Adige, Veneto and Friuli.
Article 4:
- Viticultural techniques such as grafting of vines and vine training techniques
- All harvesting must be done by hand.
Article 5:
- Vinicultural practices (including all steps used in the traditional method such as second fermentation in the bottle, tirage, disgorgement, etc.).
- Bottle aging must take place in the origin of harvest as per article 3. (One exception (due to their long tradition) is Antinori which is located in Florence).
- Wine must remain at least 15 months from the tirage on the yeasts and not before January 1st of the following year.
Article 6:
- Minimum quality and technical disciplines for example, spumante bianco:
- Foam: fine and persistent bubbles
- Color: pale straw
- Bouquet: characteristic, with a delicate scent of yeast/bread
- Taste: typically flavorsome; fresh, harmonious, full
- Min. Alcohol: 11.5%
- Min. Total Acidity: 5.5mg
- Min. Extract: 16 mg
- Max. Sugar: According to the EU norm
- Rosato is permitted
